Happy New Year

I did the requisite Black Eyed Peas for the first meal of the day; heck, it turned into the ONLY meal of the day, I made what looked like a vat of it in my oval Rachel Ray cast iron pot that weighs like, 5 pounds all by itself with its' lid. I varied it this year; I added carrots, cross cut to signify gold coins (wealth) lots of my cavalo from the garden (Tuscan black kale, very tasty) to signify paper money along with celery. That and a boatload of onions to the peas made it a very tasty dish. Usually I will make a Texas caviar which is delicious but is a bit tedious to eat all of. I had some Cajun sausages so added those for the boost in spiciness and flavor. The blackeyed peas were fresh in the produce department this year instead of soaking the hard ones all night long. That gave them more texture, I think. All in all, I will do this again. I didn't add any salt, just some chicken bouillion in place of the salt. No need for pepper or other spices.
This is my first post of the year and I realized I have been remiss in not just posting, but posting about food.
